We work in colaboration with local fruit growers making jam for Ashford Fruit Farm from their own fruit, and preserves from Arlington Court, the local National Trust property. The produce from Arlington Court's walled garden is picked in the morning and cooked the same day, total food miles........one.
We have a strong enviromental ethos reusing, recycling and composting. We have planted fruit trees and bushes to cut down food miles, although it will be some years before full productivity. We do not use pesticides or herbicides and share fruit with the birds. Last year we had 26 different species of butterflies, numerous dragonflies and a plague of toads (thank goodness !)
Imported frozen fruit for jam is cheaper than buying local due to labour costs, the enviromental cost however is high. Wherever possible we source locally, not only is the flavour of cooking from fresh better, but you don't need added pectin or setting agents.
